The little fennel plants that you pull out to allow room for the others are excellent cooked for about 10 minutes in lightly salted water, served cold with a drizzle of olive oil and just a drop or two of lime juice.
Beneath their innocent look baby fennel or not these guys have a strong flavour.
The lime juice is a welcome addition to the aniseed flavour, but you don't need much.
A little appetizer for cocktail hour.
