Generally you eat celeriac remoulade but since this year we have a lot of turnips and my Turkish friend Yesim always eats them raw, so we thought we would try turnip remoulade.
A remoulade is a common french sauce which is basically mayonnaise with a good dollop of Dijon mustard, though there are a million variations on the theme. We like to add a touch of vinager, and sometimes a tbsp of heavy cream.( Photo LOF - remoulade sauce)
The most important thing is to use fresh small turnips that aren't bitter or tough. Peel the turnips and coarsely grate them, add the remoulade, gently mix and eat - its really good. And just between us it has a more delicate taste than your classic céléri rémoulade. It is good as an hors d'oeuvre or with a green salad. It can keep in the refrigerator for 2-3 days.
