Eggplant (solanum) come from a large family large family. In the north (of the 38th parallel) « solanum melongena » are common. Here we grow african eggplant as well. We use it pretty much like tomatoes. You have to be careful though because they become really soft if they are heated too long.
At noon our chicken with lemon was served with the pretty plate above.
